The Cuisine Of Jammu And Kashmir

The sobriquet of “Paradise on earth” aptly describes the beautiful state and its wonderful cuisine. Since this state is divided into three regions i.e. Jammu, Kashmir, and Ladakh the cuisine available here is not only varied but interesting as well. So, while the Hindu Dogras of Jammu are mainly vegetarian and eat normally rice, wheat, and kidney beans. The Ladakhis and Kashmiris are non-vegetarians. However, one must admit that it is essentially the Kashmiri cuisine that is renowned for its wide range of delicacies and use of exotic of spices in them.

Generally speaking, Kashmiri cuisine is meat based and one of its most famous delicacies is called “Wazawan”. This dish called Wazawan includes a spread of 36 food items i.e. mainly meat cooked all through the night by a team of chefs. And this team of chefs who help cook it are called Wazas.  This team is led by a master chef called the Vasta waza. This dish consists of thick meat gravies which use yoghurt, spices, and dry fruits to give it a unique flavour.  It is also normally cooked in ghee or mustard oil. In the Wazawan the most famous dish is Yakhni.  This is a mutton dish in which pieces of mutton mixed with spices such as cardamom, cinnamon, bay leaves etc are added to a yoghurt based thick gravy.

Another famous dish in the state is the “Rogan Josh”.  This delicacy mainly consists of large chunks of lambs are cooked along with a thick gravy. Dum aloo is another popular dish that is a part of the Wazawan. In this dish baby potatoes are deep fried and then cooked along with gravy consisting of Kashmiri spices like chillies, cardamom, coriander powder etc.   While in terms of drinks Kashmiri tea “Kahva” is a popular beverage in the state. And it is usually drunk after every meal.

Since the state of Jammu and Kashmir is diverse with Hindus, Muslims, and Buddhists all living together in the same region. It is obvious that the cuisine available in this region will be varied. And so if you truly enjoy variety in your food then you must experience “Kashmiri cuisine” at least once in your lifetime.
