The state of Uttarakhand is known for its scenic beauty but what is unknown, is the fact that it also possesses an extremely delicious cuisine. The cuisine in this North Indian region basically consists of vegetarian food although non-vegetarian is also very popular. The food in this region is basically based on ingredients such as coarse grains with high fibre content. Pure ghee or mustard oil is mainly used while cooking in this region. There are also certain delicacies in this region that use hash seeds as spice in food.

Uttarakhand Map
There are a number of popular delicacies in this state and they are as followed:
- Phanu: Is a delicacy made from dals (lentils) like chainsoo. The dal is initially soaked in water 4 to 6 hours before it is used to prepare this dish. A variety of other dals such as Gahat, Arhar, or Green mung can also be used to prepare this dish.
- Kafuli: Is a dish prepared from green leafy vegetables. It is from green leafy vegetables that a thick gravy is extracted. This delicacy is most commonly prepared by using Spinach leaves.
- Thechwani: Is prepared using radish root also known as pahari mula or potatoes. “Thinchao” means that the radish root or potato root is uncut and hence this dish is named “Thechwani”.
- Chainsoo: Is a black gram dal delicacy. A similar dish with a minor variation is prepared using black bhat (a type of soyabean) and this is called Bhatwani.
- Jholi: In the Garhwali language means very thin gravy. This dish is usually made of curd. Although, it could also be made of tomatoes, potatoes, and other tubers. It is also very similar to Phanu in the way that it is prepared.
- Chutney: Is mainly prepared during winters and taste really good with Tor ki dal and bhaat and Gahat ke paranthe. Additionally, it can also serve as a dip during snacks.
- Roat: Is an important traditional Garhwali delicacy and is prepared mainly during marriages, family, or religious functions.
- Baadi: Made from “Kwada ka Aata” also known as Choon or Mandua flour tastes the best when eaten with Gahat ki dal or Phanu.
Apart from the above-mentioned delicacies, there are others such as Bhatt ki Churdkani, Gulgula, Mandua ki roti, Thagya roti etc that are also popular in this region.
So as can be seen the true beauty of Uttarakhand does not only lie in its landscapes but, it also lies in its cuisine.
